Scientists Harvest Ötzi Yeast to Bake 5,300‑Year‑Old Sourdough

Ötzi yeast revives ancient bakery craft

Scientists have coaxed four cold‑adapted Ötzi yeast strains from the mummified remains of the Alpine iceman, who perished 5,300 years ago. The microbes, frozen in his skin and clothing, were revived in a lab and used to inoculate a modern sourdough starter, producing a loaf that tastes of stone‑age grain.

“It was very very good,” the lead microbiologist said, tasting the crust.

The discovery, reported in Reuters, shows how resilient microbes can survive millennia in extreme conditions.

From frozen flesh to rising dough
